This can only be done during the Sequence 2 Memory 3, when you get the optional mission to pickpocket the three templars. All you have to do is to pickpocket them, and as soon as you pickpocket the third templar, go to the menu and Reload from Last Checkpoint. The money you have robbed won’t disappear, and you will be allowed to pickpocket them once more. Keep doing this until you have enough money to buy all the stuff that you need (you can get about $50,000 in 10 minutes).
